Cheeseburger Pizza (Low Carb)

Move over fast-food-pizza-chain! I've got a homemade recipe that'll give other pizza places a run for their money. The best part is that it won't blow your carb macros out! At 515 calories, this was such a hearty and heavy meal that'll keep you full FOR HOURS.



Let me give you a caveat as early as now: this is a multitasking recipe. You'll have to brown the meat in a cast iron skillet, while also making the fathead dough and baking it just in time to be pile on the topping before the meat gets cold and lardy. This is pretty much the same fathead dough recipe you'll find here, except that I used almond flour for this one. You can use either coconut flour or almond flour, or a mix of both which is usually the best kind.


*Quick note: I wanted to make a bigger dough/pie, so I just doubled the fathead ingredient portions below.


INGREDIENTS:

Fathead dough

2 oz. cream cheese

3/4 c shredded mozzarella

1 egg, beaten

1/2 tsp of the ff: garlic powder, onion powder, oregano, thyme, rosemary

1 1/2 cup super fine almond flour (order a bag by clicking here)


Toppings

1/2 cup white onion, chopped

1 lb ground wagyu beef, seasoned the way you prefer (I used a mix of 1 tbs soy sauce, 1 tsp Worcestershire, 1 tbs A1 barbecue sauce, and 1/4 cup Cabela's applewood rub seasoning)

1/3 cup shredded mozzarella

1/3 cup shredded Mexican blend cheese

1/2 cup tomato basil sauce


DIRECTIONS:

On a very hot cast iron pan (and I mean REALLY HOT), sauté the onions until they're fragrant. This doesn't take too long, I'd say about 2 minutes. Then toss in your beef and brown them (you'll have to restrain yourself from eating it ahead of the whole pizza assembly because they will smell and taste so good; but I promise it's worth the wait!). While the beef takes time to cook, work on your dough.



Preheat your oven 425F.


In a microwave-safe bowl, melt the shredded mozzarella and cream cheese. This usually takes me 2 minutes. Make sure you stir all your dry ingredients together before mixing them into the melted cheese. Stir until it's combined well and forms a dough. On a lined baking sheet, stretch out the dough to resemble a pizza pie. Bake it for 10 minutes and then take it out, add your toppings, and then bake it for another 8-10 minutes or until the crust is golden brown and the cheese is melted in the most gloriously gooey way.



I wanted to give it extra crispiness, so I fried it up on the cast iron for about three minutes. And that's it! So good, so keto, and it's homemade. A cheesy, gooey, tasty, and wholesome, homemade pizza is something you can be proud of accomplishing (LOL I know I am).



If you look closely, you can see the Italian spices in the crust and the bottom has a pretty legit sear you'd think it's was stone oven-baked. This is a recipe that you and your friends, your family, or your significant other can set out to make together. The best part is eating it together.
