Buttermilk Garam Masala Chicken Tenders (super moist and juicy!)



I have been obsessing over buttermilk marinades for my chicken tenders and breast fillets lately. Air-frying has been the best way I have found to keep chicken breast moist--the only thing left to do is decide what flavor or seasoning to use. I previously made Lime Herb Chicken fingers that were very moist and tender--but this recipe by far is the best one in terms of flavor.


INGREDIENTS

6 pcs chicken tenders

1 cup buttermilk (I did not have any, so I made my own. See below for how to make your own buttermilk substitute*)

1 TBS Garam Masala seasoning

1/2 TBS Bay Seasoning

1/2 c all purpose flour

1/2 c bread crumbs

salt and pepper for additional seasoning if needed (I think I really do this out of habit more than need for additional seasoning haha)


* Buttermilk substitute: 1 cup whole milk + 2 TBS lemon juice or vinegar. Mix together and let sit and curdle for 10 minutes


DIRECTIONS

Make sure chicken tenders are completely thawed out and patted dry.


In a bowl, mix your garam masala and bay seasoning into the buttermilk. Toss in your chicken tenders and let soak for at least 45 minutes. Best results for flavor is to soak them overnight. They become incredibly tender and the flavor seeps through even more.


In a separate bowl, mix together your bread crumbs and flour.


Shake off excess buttermilk and then dredge the tenders in the bread crumbs and flour mixture.


Preheat your air fryer to 400F for 5 minutes. Spray air fryer with non-stick cooking spray and then lay out the tenders--making sure not to crowd them so they crisp up. If you put them too close together, it will steam instead of crisp.


Cook for 6 minutes per side. You may need to spritz a little more cooking spray in between flips to help them brown better. If the second side needs a little more time, feel free to flip them over again and cook for another 1 or 2 minutes. Place on a cooling rack while you cook the others so they can release heat without getting soggy.


Serve along with some pan-fried green beans in grass-fed butter (or non-stick cooking spray), seasoned with salt and pepper and drizzled with lemon juice. The lemon juice goes well over the chicken tenders too! So easy, so flavorful, packed with protein and prefect as a quick post-workout meal!
