I was craving tater tots but didn't want to sabotage being back on track with my nutrition, so instead I settled for a "smarter" way to snack. Enter the humble and underrated green olive. I've had this jar of olives in my fridge forever. I usually stuff them with bleu cheese for a dirty goose martini (made with Grey Goose) or put them in a bowl for a charcuterie board or grazing table setup. They're so versatile. You can stuff them with anything you want--bleu cheese, jalapeño, sweet pepper, etc, go crazy! This is super easy to make and relatively guilt-free since you're air-frying it.
INGREDIENTS:
a jar of pitted green olives
1/3 c all-purpose flour (this works best for the kind of breading we're aiming for)
1 large beaten egg
1/4 c Panko bread crumbs
1/4 c grated parmesan cheese
DIRECTIONS:
Rinse the olives a coupe of times under running water and then soak for about 10-15 minutes. This will help get rid of some of the saltiness.
Preheat your air fryer at 400F (I usually preheat mine for a good 10 minutes). Mix your bread crumbs and parmesan cheese.
Dredge olives in flour, dip in the beaten egg, and then coat with the parmesan and bread crumb mixture. Spray with some non-stick cooking spray to help them brown as they cook, and cook them for a total of 10-12 minutes until they reach a nice golden colour. You may want to pause the cooking and shake them up halfway to help even out the cook and colour.
Once they are done cooking, transfer to a serving dish and allow them to cool for about 5-10 minutes. You can serve them with a side of ranch dressing (this was so delicious) or whatever sauce you prefer.
