This is such an easy dish to make and yields tasty and juicy patties. It's one of my favorite ways to have ground chicken (I find ground chicken easier to consume in greater amounts than chicken breast fillets). This is essentially a marinade for chicken breasts if that's what you prefer, but I mixed the marinade into the ground chicken for this recipe.
INGREDIENTS
1.5 to 2 lbs ground chicken (you may use 4 chicken breast fillets if you prefer)
1/4 cup olive oil (NOT extra virgin)
1/2 c chopped fresh cilantro
juice of 2 limes (I added some lime zest for more flavor)
4 garlic cloves, minced
1/4 tsp salt
1/4 tsp pepper
red chili pepper flakes are optional if you want a little heat
Side dish:
Baby broccolini
minced garlic
lemon slices, quartered
DIRECTIONS
Spray with non-stick cooking spray and reheat your air fryer at 400F for 5 minutes.
Mix all your ingredients together in a bowl and shape them into patties. Air fry for 4-6 minutes each side (this depends on how thick and how big you make them--just make sure it's fully cooked--never serve undercooked chicken!). I like to cook them until they get a touch of brown crispness on the edges which usually is about 6 minutes a side.
If you decide to do baby broccolini for a side dish like I did, just sauté it in a hot pan with the lemon slices and minced garlic. Let it sear just a touch on both sides and then pour about 2 TBS of water, cover, and let steam for a few minutes more until it's cooked but still has crunch and a bright green color.
