One of the greatest tragedies in my life since switching to the keto lifestyle is having to quit dessert because I have a massive sweet tooth. I love churros, donuts, cookies, and cinnamon pretzels. Well, thankfully I came across a recipe for fathead dough which is the saving grace and dough base for all keto heads.
INGREDIENTS: (can yield 5-8 pretzels depending on how big you make them)
Fathead Dough:
1 1/2 cup shredded mozzarella
2 tbs cream cheese
3/4 cup super fine almond flour
1 egg, beaten
Cinnamon Sugar Coating:
3 tbs coconut oil, melted
1 tsp butter (grass-fed unsalted!), melted
1/2 cup erythritol or sweetener of your choice
2 tbs ground cinnamon
DIRECTIONS:
Preheat oven to 350F.
In a microwave-safe bowl, melt your mozzarella and cream cheese together for about a minute or two (depending on your microwave--mine takes 2 minutes) until it's all melted and soft. Mix the almond flour and egg together until it starts to form a dough. Transfer it onto parchment or wax paper so you can knead it and form the pretzels.
If the dough is too sticky, just wet your hands or fingers and that should help. Once all pretzel knots are formed and transferred onto a lined baking sheet, bake them for 15 minutes or until they are light brown.
Now while they're in the oven, it's a good opportunity to get your coating ready. Mix the melted coconut oil and butter together. And in a separate bowl, mix the sweetener and cinnamon. When the pretzels are out of the oven, brush them with the butter and oil mixture, and immediately toss it into the cinnamon sugar mix so the coating sticks.
These babies are best served fresh out of the oven. They're pillowy and soft. It's so mind-blowing to think that cheese and almond flour could turn into something like this.
In the event that you have any leftovers (we never do because it's such a hit around our house that they all get eaten up within five minutes), you can store them in the fridge in an airtight container. Hope you guys like it!
