Coffee Cookie Creme Protein Donuts


I've been craving sweets lately (which is my brain's way of saying my body really actually needs amino acids and fatty acids). But instead of reaching for store-bought sugary snacks (which are usually non-existent in our home--except for dark chocolate and Terry's Chocolate Orange), I decided to make these. INGREDIENTS:

1/4 c Cookies n Creme Healthy Meal Powder

1/4 c Protein Coffee Mix

1/2 cup Almond flour

2 TBS granulated Monkfruit

1/4 tsp baking soda

1/2 tsp baking powder

1/2 tsp vanilla extract

2 eggs

1/2 c (and maybe a little more) water or almond milk

-Batter should be a little runny like pancake batter


DIRECTIONS:

Preheat oven to 350F. Grease silicone donut molds with non-stick spray.


Mix all dry ingredients together with a fork or whisk. Then add your wet ingredients in. I like to use a fork to mix--and because we are using almond flour, you don't have to worry about overmixing--there is no gluten (since we're not using flour) to activate!


Once mixed and oven is ready, pour about 2 and 1/2 TBS of batter into each mold. Bake for 14 mins or until a skewer poked into the donut comes out clean.


FROSTING:

1 scoop of Coffee Protein Mix

1 scoop of Dutch Chocolate Health Meal Powder

water or milk (amount will depend on the consistency you prefer)


Just mix until you reach your desired consistency.


Make sure to wait that donuts are completely cooled before applying frosting! Another fun way to dress up your donuts is to coat them in monk fruit cinnamon "sugar" (Just mix granulated monk fruit and ground cinnamon) and then a dollop of the frosting in the middle.
