Dulce de Leche Protein Waffles

Weekends are special for many reasons--one of which is the breakfast we look forward to. My son loves Saturday morning breakfasts because that's when I either make pancakes, French toast, or in this case, waffles. In the spirit of always wanting to feed my family the best, I made low-carb, sugar free, protein waffles to give them a nutrient-rich start to the day!


INGREDIENTS:

1/2 c almond flour

1/4 c Dulce de Leche meal shake*

1/4 c Peanut Cookie protein drink mix**

1/4 tsp baking soda

1/2 tsp baking powder

1 1/2 TBS monkfruit

2 eggs

1 tsp vanilla extract

1/4 to 1/2 c almond milk (or your preferred liquid--I use either plain water or low-fat goat milk)


DIRECTIONS:

Heat up your waffle iron while you mix your ingredients together.


Whisk together the dry ingredients first and then your wet ingredients. Because you're working with almond flour, you don't have to worry about over-mixing it since it does not have gluten.


When the waffle maker is ready, spray it with non-stick spray and pour your batter in the center, 1/4 cup at a time. Depending on your waffle maker, it should take anywhere from 2-3 minutes (maybe even 4) to cook it up to a nice, crisp finish.


I usually top it with a non-dairy whipped cream like Reddi Whip coconut milk or Lakanto monkfruit pancake syrup. Enjoy!
