I decided to take a break from all the keto pastries and "pita" chips and whip up a different kind of snack. This was ridiculously easy to make and totalled 2 grams of net carbs for the ENTIRE batch of crackers. You only need 5 ingredients to pull this off, too!
INGREDIENTS:
1 cup ground flaxseed (I use Bob's Red Mill Ground Flax Seed Meal and you can order it straightaway by clicking here)
2 eggs, beaten
1/2 cup grated Parmesan cheese
1 tsp fresh rosemary, minced
sea salt or kosher salt for sprinkling
DIRECTIONS:
Preheat oven to 350F. Spray a baking sheet with nonstick spray or line it with parchment paper.
In a bowl, add together all the ingredients, except for the salt, and mix well to combine. Let it sit for 5 minutes.
Form the flax seed dough into a ball and roll out as thinly as possible. You'll want to grease up your countertop and rolling pin (I rolled my dough out over parchment paper) so the dough doesn't stick. The trick is to get it as thin as possible so you can get more crunch and crispness out of the crackers. Sprinkle with salt, and cut up into squares or triangles (or whatever shape you fancy).
Bake it for 10 minutes. Then remove the tray from the oven, flip all the crackers over and bake it again for another 4 minutes.
The entire batch is 998 calories and has:
55g Protein
2g Net Carbs
70g Fat
