With the last few weeks of summer making every grill day precious, I wanted an Asian flavour for today's lunch. This was an easy marinade to make and so full of flavour too! I used skewers to make them easier to handle on the grill and keeps the tenders flat for an even cook.
INGREDIENTS
2 lbs of chicken breast tenders
1/2 c soy sauce
1/4 c red wine vinegar
1 lime, juice and zest
3 TBS sesame oil
3 green onions, chopped (set aside some for garnish)
4-5 cloves of garlic, mashed
salt and pepper
3 TBS honey
toasted sesame seeds (for garnish)
DIRECTIONS
Preheat your grill to 350F.
Mix all the ingredients together and let the chicken tenders marinate for at least 30 minutes. Skewer the tenders and grill for 4-5 minutes per side. Occasionally baste with the leftover marinade to keep the chicken juicy and tasty.
Once cooked, set aside and let rest. Garnish with toasted sesame seeds and chopped scallions before serving. This was so good served with a steaming portion of basmati rice.
