Oh yes! Who says we can't have chocolate cake on keto? This recipe is so simple, so easy, and takes only a few minutes to throw together. If you want to make for a group of people, you can easily mix them in their own mugs and just line up for nuking in the microwave. If you're averse to the microwave, you can always bake it in ramekins at 350F. Check the top for consistency and doneness; the top should be springy but moist.
INGREDIENTS:
2 Tbs grass-fed, unsalted butter (melted)
1 egg
2 Tbs Erythritol
2 Tbs unsweetened cocoa powder
1 Tbs heavy cream
pinch of salt
1 Tsp vanilla extract
Whisk all of the ingredients together in a bowl until you get a bubbly mixture. Take a mug and coat the inside with non-stick spray. Pour the batter into it and microwave for 45 seconds on HIGH. When it's done, turn it out onto a bowl or dessert plate and top with whipped cream (I love Cool Whip). It's reminiscent of a flourless chocolate cake.
