I served these at a Halloween get-together with some of my favourite friends and it was a hit. I love that they were yummy enough to please the indulgent, while it was low-carb, and high protein for the more conscientious eater. ;) These are so easy to make and provide guilt-free snacking--especially for those watching their sugar intake. (I also made some Pumpkin Pie Spice Protein cake pops to go with these which you'll see in the photo)
INGREDIENTS:
1/2 c almond flour
1/4 cup Vanilla Protein Drink Mix (PDM)*
1/4 c Orange Cream Formula 1*
1/4 tsp baking soda
1/2 tsp baking powder
1 1/2 TBS monkfruit
2 eggs
1 tsp orange extract
1/4 to 1/2 c almond milk (or your preferred liquid--I used low-fat goat milk)
For the frosting:
1 scoop Vanilla PDM*
1 scoop Orange Cream Formula 1*
orange zest, few drops of orange extract
little bit of water
-Mix these together until you get a frosting consistency. This holds well in the fridge if you're still waiting to cool the donuts before topping them.
DIRECTIONS
Preheat oven to 350F.
Mix your dry ingredients together first in one bowl. In another bowl, mix your wet ingredients together. Then mix your wet ingredients into your dry ingredients and stir until you get a brownie batter-like consistency--perhaps a little runnier.
Be sure to spray your donut tray with a non-stick cooking or baking spray or else you'll have a hard time getting those babies out good shape. Bake for about 10-12 minutes or until a toothpick test proves it's well done.
Let it cool on a wire rack and once cooled, you can smear the frosting on top. I zested an orange and added some coconut shreds on the others to make them more visually appealing--plus the zest adds a little zing.
