I just got back from a crazy fun leadership retreat with a gaggle of other boss babes from the same company. Part of the fun was learning and sharing recipes of goodies we love but making them in a healthy way. I met Darlene Pope who is a master pastry maker and healthy treats baker and these waffles were inspired by her pumpkin spice protein donuts.
INGREDIENTS:
1/2 c almond flour
1 scoop Caramel Apple Formula 1 Healthy Meal powder
1 scoop Vanilla Protein Drink Mix powder
1/2 tsp baking powder
1/4 tsp baking soda
2 TBS butter (Kerry Gold is my preference) or avocado oil (my preferred oil)
2 TBS Monkfruit sweetener
1 c milk (or water)
2 eggs
Glaze:
Powdered Monkfruit Sweetner (looks like confectioner sugar)
1/2 TBS water (you can also use lemon juice if you want a little tang)
Ground cinnamon (or sugar free cinnamon roll powder by Flavorgod)
DIRECTIONS:
Whisk your dry ingredients together in a medium bowl, and in a small bowl , whisk your wet ingredients together. Then mix your wet into the dry until you get a nice, smooth batter.
Make sure to grease your waffle maker properly so it doesn't stick.
When it's hot and ready, conservatively pour about 1/4 c of the batter into the waffle maker. Let it cook until there's minimal smoke coming from it. Remove from waffle maker gently using silicone tongs and let cool on a wire rack.
Mix your powdered sweetener and water or lemon juice in a small bowl, and once you reach your desired consistency (where it's not too thick but also not too runny, but will pour nicely), use a teaspoon to drizzle it over your waffles. Cinnamon sticks look great as garnish. You can also add some apple slices and grate some fresh nutmeg on top. Our company has a delicious herbal tea concentrate that comes in powdered form and the Chai flavour would be so perfect served with a stack of these babies.
