Immediately back at it again with another chaffle idea for you! While you can surely eat a chaffle plainly, topped with butter or some sugar free waffle syrup, you can also use it to make a sandwich. I love sandwiches but dreaded consuming processed white bread--so this is a great hack for me. The ingredients for a basic chaffle is really just cheese and egg. There's so much room for creativity and options like cheddar vs mozzarella, add herbs, garlic and onion powder, etc.
INGREDIENTS:
1 egg
1/2 c mozzarella cheese
1 tsp garlic powder
2 tsp dried parsley
pinch of salt
DIRECTIONS:
Preheat your mini waffle maker for 5 minutes.
Mix all ingredients and pour half the batter into the waffle maker.
Let cook for 3-4 minutes or until little to no steam is coming from the waffle maker.
Set chaffles aside to cool if you like them crispy.
I enjoy the ease and convenience of deli meats so for this one, I used sliced roast beef, piled on a cluster of spring mix greens, slathered a teaspoon of avocado mayo, et voila! Easy, tasty, and guilt-free.
Other sandwich filling options can be ham, tuna, chicken breast, pepperoni--it's up to you.
