Some days just call for some good old mac and cheese, right? I've been trying to find a way to either avoid mac and cheese altogether or just finding some other way to curb that craving. But I got frustrated with my less-than-stellar substitute ideas, so I decided to bite the bullet and actually make an effort to find a keto/low-carb way to get my mac and cheese fix without blowing out my macros.
INGREDIENTS:
1 cauliflower head, chopped into florets
half a head of broccoli (or 1 small head of bro) also cut into small florets
1 c heavy whipping cream
1 c cheddar cheese, shredded
1/2 c mozzarella cheese, shredded
2 garlic cloves, minced
salt and pepper to taste
cayenne/paprika (optional)
DIRECTIONS:
Boil cauliflower and broccoli for 5 minutes or until tender. If you're feeling lazy, just nuke it in the microwave for 5 minutes. Drain excess water with a paper towel.
In a skiller over medium heat, simmer heavy whipping cream. Once simmering, add in the cheese and the garlic until it's all melted and incorporated well together. Add in the caulk and broccoli and mix well. Season with salt and pepper and a touch of cayenne or paprika. That's ready to serve.
BUT! If you wanna be extra, top it with crumbled bacon and then bake it in the oven at 400F for about 12 minutes or until cheese is slightly golden brown.
