I know it's probably a weird combination and it's not the most aesthetic dish I've plated. But this was a dish that covered all bases--high in protein, low in carbs, good fat, and has veggies. You can skip the ranch green beans if you want to, though.
INGREDIENTS
1 lb ground turkey
1/4 red onion finely chopped
1 beaten egg
1 tsp cumin
1 tsp salt
1tsp garlic powder
1/2 tsp black pepper
1/3 c fresh cilantro chopped (if you have the gene that causes you to abhor cilantro, feel free to omit it from the recipe)
2 tsp chili powder
1/2 c mozzarella cheese, shredded
1/4 shredded cheddar (for topping)
2 TBS pizza or spaghetti (or even plain tomato) sauce (I used Barilla Tomato and Basil)
For the green beans:
6-8 oz green beans, roughly chopped.
1/4 red onion, minced
1 TBS heavy cream
powdered ranch seasoning (I use FlavorGod ranch seasoning to cut down on sodium)
DIRECTIONS
Preheat oven to 375F.
Line a baking tray (with raised edges) with nonstick foil or parchment paper.
In a large bowl, mix together all the ingredients except for the cheddar and tomato sauce.
Split into 3 or four portions and flatten into round little pizza shapes.
Bake for 20 minutes and when time is done, take it out of the oven, top with the sauce and cheese, and bake for another 10 minutes.
For the beans, sauté the onions in a small skillet, until they're soft and fragrant. Add in the beans and sauté until cooked but still crunchy. Season with salt and pepper, sprinkle ranch seasoning, and then add in the heavy cream (you can tweak it with a little bit of water if it's too dry) and stir occasionally.
Plate, serve, and enjoy!
